First of all, it should be noted that E.coli 0157:H7 is a pathogenic form of the bacillus strain that produces cytotoxins that inhibit natural protein biosynthesis and bind intestinal microvessel epithelial cell receptors. E. coli is a natural component of the environment, so it is not surprising that many food industries are faced with this sanitary problem. On how correctly and timely health regulations are used depends on whether the pathogen can get into the buyer’s body. It is worth bearing in mind that hamburger production involves minced meat from chopped pieces of meat, so, unlike a whole piece, this has greater risks of infection.

Although this serotype has a suppression temperature of about 70 degrees, it may seem that both cooking mechanisms are robust. However, in the steak, the piece’s inner layers have barely been infected by the pathogen from the outside, so the potential germs of the outer layers are destroyed when roasted. On the contrary, when the mince is formed, there is constant contact with the surface and mixing. Consequently, even the cutlet’s inner layers may contain bacteria that will not be killed by temperature treatment. In the meantime, although S. aureus dies at temperatures above 42 degrees, heating the soup does not guarantee the safety of eating since this pathogen produces cytotoxins that are resistant to heating temperatures. Thus, even hot soup can become a source of infection, although no live bacteria are left in it.
